This recipe is my take on a classic crinkle cookies recipe without the cakey texture. These soft cookies with a little bit of chew were inspired by the traditional chocolate crinkle cookie.

How to Make the Best Ube Crinkle Cookies
- In a large mixing bowl, whisk together the all-purpose flour, baking powder and salt. Set aside.
- In a separate bowl or bowl of a stand mixer, beat eggs, sugar, coconut oil, vanilla extract, and ube extract until well combined.
- Next, you’ll want to pour your bowl of dry ingredients into your bowl of wet ingredients.
- Adjust mixer speed to low and mix for a few seconds, leaving a few streaks of flour.
- Pour in white chocolate chips. Fold chips into the cookie batter.
- Cover bowl with plastic wrap and chill the cookie dough for four hours or overnight. Remove bowl from the refrigerator and let sit out for 10 minutes.
- Line baking sheet with parchment paper. Set aside. Use a cookie scoop to scoop out cookie dough balls. Add icing sugar (powdered sugar) to a small bowl. Roll each dough ball in the bowl of sugar so that it is completely covered. Doing this step is what creates that fun crinkle effect.
- Place six powdered cookie dough balls onto your prepared baking sheet.
- Bake cookies at 350°F for 13 minutes or until cookie edges are firm and the center is puffed up but still looks slightly wet. I recommend baking one sheet at a time.
- Place the sheet of baked cookies on a wire rack and allow them to cool for a couple of minutes before enjoying.

- Chill Zone – It’s important to not skip the chilling time for your cookie dough. This will keep your cookies from spreading too much when baking. You want to keep it chilled in the refrigerator for at least four hours before baking. Skipping this step is one of the common mistakes people make and it’s usually because they’re just impatient (I mean, can you blame them?)
- Ube Extract – When shopping for ube ingredients such as fresh ube, ube jam or extract, your best bet is to try your local Asian grocery store.
- Room Temperature – Be sure to use room temperature ingredients.
- No Overcrowding – Only place six dough balls on each baking sheet to avoid overcrowding when baking.
- One-At-A-Time – Bake one sheet of cookies at a time. I find that this makes for more even baking.
- Cookie Cutter – Use a big, circular cookie cutter to help shape your cookies nicely after baking them. Do this when they’re fresh out of the oven. See pictures below for reference.

- Ube Ice Cream Sandwich – Add a scoop of vanilla or ube ice cream in between two cookies for an ultra indulgent treat.

This ube crinkles recipe offers a delightful fusion of flavors and textures that will leave a lasting impression on a lot of people. With its vibrant color, irresistible sweetness, and soft and chewy texture, these cookies are sure to become a favorite among friends and family alike.
Storage Tips
Allow cookies to cool completely before transferring them to an airtight container or resealable plastic bag. Layer the cookies with parchment paper to prevent sticking and store them at room temperature. These ube cookies will keep well for five to seven days. Add a piece of bread or tortilla to your container. This will help keep the cookies moist.
