Ube Crinkles Recipe

Ingredients

  • 1 1/2 cups all-purpose flour
  • 2 tsp baking powder
  • 1 cup granulated sugar
  • 2 eggs
  • 1/4 cup coconut oil
  • 1 tsp vanilla extract
  • 1 tsp ube extract
  • 1 1/4 cups white chocolate chips
  • 1/2 cup confectioners' sugar (for rolling cookie dough balls)

Instructions

  • In a large mixing bowl, whisk together the all-purpose flour, baking powder and salt. Set aside.
  • In a separate bowl or bowl of a stand mixer, beat eggs, sugar, coconut oil, vanilla extract, and ube extract until well combined. 
  • Next, you'll want to pour your bowl of dry ingredients into your bowl of wet ingredients. Adjust mixer speed to low and mix for a few seconds, leaving a few streaks of flour.
  • Fold white chocolate chips into the cookie batter. Cover bowl with plastic wrap and chill the cookie dough for four hours or overnight. Remove bowl from the refrigerator and let sit out for 10 minutes. 
  • Line baking sheet with parchment paper. Set aside. Use a cookie scoop to scoop out cookie dough balls. Add icing sugar (powdered sugar) to a small bowl. Roll each dough ball in the bowl of sugar so that it is completely covered. Doing this step is what creates that fun crinkle effect. 
  • Place six powdered cookie dough balls onto your prepared baking sheet.  Bake cookies at 350°F for 13 minutes or until cookie edges are firm and the center is puffed up but still looks slightly wet. I recommend baking one sheet at a time.
  • Place the sheet of baked cookies on a wire rack and allow them to cool for a couple of minutes before enjoying.
