Recipe Tips and Tricks

  • Let granola cups cool in muffin tin for 5-10 minutes before removing them from the tin and lined muffin cups.
  • A fun brunch idea would be to set up a healthy breakfast and brunch bar with different yogurts and toppings. This way, everyone can have fun customizing their granola cups to their liking.
  • Use this easy recipe to make your own homemade granola! Simply spread the oat mixture with a spatula over a baking sheet lined with parchment paper. Bake at 350°F. Adjust the baking time for this. Check after about ten minutes. Granola will be ready once it starts turning a golden brown color. If it’s not ready, add a few more minutes and keep checking until done. After removing from the oven, place sheet on a wire rack and let cool to room temperature. Once cool, break up the crunchy granola with your hands, toss in dried fruits like cranberries and store in an airtight container. This will be ten times better than store-bought granola!
  • If you don’t have any cupcake or muffin liners, simply spray your muffin tin cups with a bit of non-stick cooking spray.

Variations

  • Granola Base – Feel free to add different spices to your granola base such as nutmeg and pumpkin spice during the fall.
  • Protein Boost – Incorporate protein-rich ingredients like chia seeds, flaxseeds, or hemp seeds into the granola mixture for an extra nutritional kick.
  • Citrus Burst – Mix in some citrus zest (like orange or lemon) to the yogurt for a tangy twist.

Substitutions

  • Honey – You can use maple syrup in lieu of honey for this recipe.
  • Coconut Oil – You can use vegetable oil instead of coconut oil but note that it may alter the overall taste.
