Prep Time:12 minutes
Cook Time:30 minutes
Total Time:42 minutes
Servings: 12 granola cups

Ingredients

  • 2 cups old fashion oats
  • 1/2 cup shredded coconut
  • 1/2 cup honey
  • 2 tbsp coconut oil
  • 2 tsp cinnamon
  • 1/2 tsp salt

Instructions

  • In a large bowl, combine your oats, cinnamon, salt, and shredded coconut.. Next, add in honey and coconut oil. Combine well with a spatula.
  • Using a small cookie scoop, add an even amount of oat mixture to each muffin liner.
  • Cut a small piece of parchment paper and place it on one of the muffin cups. Then place the bottom of a small cup over that and press down. Repeat this process for the remaining oat cups.
  • Each granola cup should now look like a small bowl after pressing them down with the glass cup. Bake at 350°F for 30-35 minutes. They should have a golden brown color. After removing from the oven, place muffin pan on a wire rack and let cool to room temperature. Release the cups from the muffin liners and fill them with a spoonful of your favourite yogurt.

Notes

These granola cups (without the yogurt and toppings) can be stored at room temperature in an airtight container. If stacking on top of each other, place a piece of parchment paper between them so that they do not stick together. They keep well for up to a week.
