I don’t know if it’s the tangy cream cheese frosting or the tender cake with warm spices, golden raisins and bits of crushed pineapple but I can’t get enough of it. If you’re a fan of carrot cake like myself, this tutorial with step-by-step photos is for you. This is the exact way I froze and stored the leftover cake slices from my baby shower. Keep in mind that you can apply this method to a homemade carrot cake recipe or store-bought carrot cakes. 

  1. Spread any leftover cake slices onto a sheet pan lined with parchment paper and flash freeze them for about two hours.
  2. Go ahead and wrap each slice tightly in plastic wrap. 
  3. Wrap it in a layer of aluminum foil. 
  4. Place the cake slice(s) in a freezer-safe container or bag. 
  5. Label the bag with the date and contents.

  2. Next, you’ll want to wrap the cake tightly with plastic wrap. Be sure to cover the top of the cake, all around the sides of the cake and the bottom. 
  3. Lastly, go ahead and wrap the cake in a layer of aluminum foil. 
  4. Label with the date.
