Cut loaf of bread into 2 inch cubes. Set aside. Spray baking dish with non-stick cooking spray. Add bread cubes into the dish and set aside.
In a large mixing bowl, whisk together milk, vanilla extract, sugar, eggs, cinnamon, and cocoa powder until well combined. Evenly pour mixture over the bread pieces and gently push down with a spatula until bread is covered. You should see the bread soaking up the liquid.
Sprinkle chocolate chips over bread pudding before placing in the oven. Bake at 350° for 45 minutes. The bread pudding should have a golden brown color when done. Place on a wire rack to cool for a few minutes before serving.
Chocolate Sauce
In a microwave safe bowl, add in 1/2 cup of chocolate chips and 1/2 cup of heavy whipping cream.
Microwave in 20 second increments, stirring each time. Spoon over bread pudding once it's removed from the oven.
