The Best White Chocolate Chip Ube Cookies

These ube cookies will satisfy any sweet tooth! If you’re like me, you always gotta have a little something sweet after a meal. Plus, this ube crinkles recipe is packed with plenty of ube flavor and chocolatey goodness from the white chocolate chips.


– All purpose flour – Baking powder – Salt – Eggs – Granulated sugar – Coconut oil – Vanilla extract – Ube extract – White chocolate chips – Confectioners’ sugar

1. In a large mixing bowl, whisk together the all-purpose flour, baking powder and salt. Set aside.

2. In a separate bowl or bowl of a stand mixer, beat eggs, sugar, coconut oil, vanilla extract, and ube extract until well combined.

3. Next, you’ll want to pour your bowl of dry ingredients into your bowl of wet ingredients. Adjust mixer speed to low and mix for a few seconds, leaving a few streaks of flour.

4. Pour in white chocolate chips. Fold chips into the cookie batter.

5. Cover bowl with plastic wrap and chill the cookie dough for four hours or overnight. Remove bowl from the refrigerator and let sit out for 10 minutes.

6. Line baking sheet with parchment paper. Set aside. Use a cookie scoop to scoop out cookie dough balls. Add icing sugar (powdered sugar) to a small bowl. Roll each dough ball in the bowl of sugar so that it is completely covered.

7. Place six powdered cookie dough balls onto your prepared baking sheet. 

8. Bake cookies at 350°F for 13 minutes or until cookie edges are firm and the center is puffed up but still looks slightly wet. I recommend baking one sheet at a time.
