This colorful quinoa veggie bowl is nutritious, filling and delicious! This can be prepped ahead of time making it a quick and easy lunch option!

– Quinoa – Sesame oil – Salt – Cilantro – Jalapeños – Limes – Carrots – Cucumbers – Purple cabbage – Peanut dressing – Nuts of choice

Ingredient list

Wash and prep your vegetables. Cut carrots and cucumbers into thin slices.

Add sesame oil and salt to bowl of cooked quinoa.
