The pairing of this unique flavor (ube) with a classic cheesecake is a match made in heaven! I provide step-by-step instructions so you too can enjoy the creamiest and most delicious ube cheesecake!

Ube is a purple yam that originated from the Philippines. It has a nutty, vanilla flavor.

What is ube?

In a medium sized bowl, combine cookie crumbs, sugar, melted butter, and a pinch of salt. Next, you'll want to press the crumb mixture into a 9" springform pan. Bake crust at 350°F for 8 minutes.

Making your cookie crust

Pour cream cheese filling over cooled cookie crust. Remember to reserve about 1/2 cup of the cream cheese mixture. 

Cheesecake filling

Mix the 1/2 cup of cream cream cheese mixture with the ube halaya and ube extract.

Drop dollops of the ube mixture over the cheesecake.

Run a chopstick or butterknife through the dollops, back and forth and side to side, to create a beautiful swirl design.

Bake cheesecake at 325°F for 40 minutes. Be sure to let cheesecake cool  completely to room temperature before placing in the refrigerator. Chill for at least 4 hours or overnight. Enjoy!
